The Beef Marbling Score (BMS) is an international grading system used in Japan that ranges from 1 to 12, indicating the level of intramuscular fat in a cut of meat. This system allows for comparisons between beef from different countries, addressing the potential confusion caused by varying grading standards, such as those set by the USDA.
In this grading system, USDA Prime beef reaches a maximum BMS of 6 and on rare occasions 7, while high-end Japanese A5 Wagyu scores as high as 12. This comparison of grading systems is valuable for both consumers and producers in understanding meat quality grades.
Beef grades can fluctuate due to various factors, including the time of year, the age of the animal, and several other influences throughout its lifespan. As shown on the arranged international grading scales, T&K proudly maintains an average BMS score ranging from 7.5 to 8.5. We are committed to producing the highest quality Wagyu beef, consistently ranking above the USDA grading scale
